I usually get strawberry tiramisu from Pompi, which claims to be the King of Tiramisu (Il Re di Tiramisu) but with children’s parties coming up, I wanted to see if I can make them at home.
On top of that, with Spring well on its way, we now find strawberries in the shops and with some in the fridge, I figured that strawberry tiramisu would be a refreshing treat.
I used jars but that was because I was going to bring one over to my nieces. Unfortunately for them, it never made it to their house. You can simply use a glass tray but they sure looked nice in the jars.
Strawberry Tiramisu Recipe

Ingredients
600g strawberries
2 eggs, separated
80g caster sugar
400g mascarpone
200g sponge finger biscuits
200ml sweet dessert wine or grand marnier or fresh orange juice (Note: I used orange juice as I would make this dessert for young children)
Instructions
1. Halve or quarter the strawberries.
2. Let the strawberries soak in the orange juice.
3. Beat the egg yolks and caster sugar together until smooth, then whisk in the mascarpone.
4. Beat the egg whites in a separate bowl until peaky, then fold the whites through the mascarpone cream.
5. Drain the strawberries from the juice. Reserve the juice.
6. Dip each biscuit in the juice (or wine) just long enough to coat it and arrange a layer of soaked biscuits on the base of a glass serving dish. Cover with a layer of mascarpone cream and a layer of berries. Repeat, finishing with a generous amount of berries.
6. Refrigerate for three or four hours before serving.
Notes:
It took me about 30 minutes to make this strawberry tiramisu.
If you plan on using jars, I used a spoon to slightly press down on each layer so they are minimal gaps between each one. I also diced the strawberries so it would be easier to fit them in the jar.
The original recipe called for 100g of sugar but I reduced it. Also, I halved the recipe which worked out well. Thank goodness because this strawberry tiramisu was so good, I would have devoured it all on my own.
I was wondering if you think soaking them in high grade strawberry balsamic would be good? I’d hate to take away from the flavor of a great strawberry by soaking it in strawberry balsamic. What’s your thought?
I am not sure where I would get high grade strawberry balsamic in Rome but that would be an interesting idea.

We brought it over to a friend’s house for dinner last week and they absolutely loved it, to the point I think they just had too much of it in at one go! Can you get strawberries yet or is it still too early?
