Here’s an easy recipe that you can easily make at home. In Rome, I am fortunate that I can buy fresh pasta from the many shops which make them.
If you aren’t keen on making fresh pasta at home, you can usually buy them in packages at the supermarket or alternatively you can just use dry pasta such as penne or farfalle.
When I prepared this dish, it took me about 20 minutes but to be on the safe side, 30 minutes is a safe bet!
Preparation and Cooking Time: 30 minutes
Serving size: 1 portion
Ingredients
Zucchine 120grams
Fettucine 90grams
Speck 50grams
Saffron (optional)
Olive oil and salt (as needed)
Parmesan 10g (as you want really)
Directions
1. Add some oil to a frying pan and saute the speck. Once they are browned, transfer them to a plate.
2. In the same frying pan, add some more olive oil to saute the zucchine.
3. In the meantime, start a pot of water boiling for the pasta. Make sure the zucchine is all done before you start cooking the fettucine. As this is fresh pasta, it needs to cook for less than a minute. If you are using packaged fresh pasta or dry pasta follow the cooking time given.
4. Add some sea salt into the boiling water before putting in the pasta.
5. Drain the pasta and add them to the zucchine in the frying pan and put in the speck.
6. At this time, if you want, you can add the saffron.
7. Mix everything up well and before serving, sprinkle some parmesan on top.
