Visitors to Rome love suppli and as per several requests, I have posted the recipe here and the instructions. I have also included a link to a video of how to make suppli. It’s no surprise I just buy it from the shops – I don’t like frying things at home!

Ingredients
- 300 g. of rice (try to use rice for risotto)
- Tomato sauce (not ketchup!)
- Grated parmesan to your liking
- One egg
- 250 g. of mozzarella
- Breadcrumbs as needed
- Oil for frying
Instructions
Cut the mozzarella into cubes. Cook the rice. Once the rice is done, add tomato sauce and grated parmesan (also salt if you want). Leave it to cool.
Beat the eggs.
When the rice has cooled down, shape them into round or oval balls and stick a few cubes of mozzarella in them.
Make sure the rice completely covers the mozzarella. Coat the rice ball with the beaten egg and then roll them in the breadcrumbs.
Fry them until golden brown.

Tip: You can make them a few hours earlier and just heat them up in the oven for a few minutes before serving.
